Beet & Goat Cheese Salad

  • 2 cups cooked beets, cut into small cube
  • 3 cups spinach shoots
  • ½ cup of crumbled goat cheese
  • ¼ cup sliced almonds or toasted grilled nuts
  • 3 tbsp. Nadine Maple Balsamic Vinaigrette & Dijon
  • Salt and pepper to taste

 

Preparation

  1. Place spinach in a salad bowl.
  2. Drizzle with vinaigrette and stir.
  3. Cover with beets, goat cheese, almonds or walnuts.
