Couscous Salad

  • 2 cups of wheat semolina (couscous), cooked and cooled
  • ½ cup chopped chives
  • 4 oz feta cheese crumbled
  • 1 ½ cup chickpeas, drained and rinsed
  • 16 cherry tomatoes, cut into four
  • ½ red onion, finely chopped
  • Nadine Maple Balsamic Vinaigrette & Dijon
  • Salt and pepper to taste

 

Preparation

  1. In a large bowl, combine couscous, chive, cheese, chickpeas, tomatoes and red onion. Salt and pepper to taste.
  2. Add vinaigrette to the mixture, according to taste.
