Gourmet Muffins

  • 1/3 cup oil
  • ¾ cup milk
  • 1 egg
  • 1 cup wheat flour
  • ½ cup unbleached flour
  • ¼ cup wheat germ
  • ½ cup Nadine Maple sugar
  • ½ tsp. with salt
  • 1 ½ tsp. baking powder
  • ¾ cup white chocolate chips
  • ¾ cup dry cranberries
  • 1/3 cup sliced almonds
  • Ground cinnamon and flaxseed to taste

 

Preparation

  1. In a large bowl, combine 2 flours, baking powder, salt and wheat germ.
  2. In another bowl, combine oil, brown sugar, egg and milk.
  3. Add the liquid ingredients to the dry ingredients and stir well. Add cranberries, almonds and chocolate chips.
  4. Place the mixture in a 12-muffin pan.
  5. Before baking, sprinkle the top of flaxseed and cinnamon to taste.
  6. Bake for 20 to 25 minutes at 350°F.
